Blueberry Muffins

After months of using frozen or preserved berries, finally I came across some plump, fresh blueberries. I was so excited, I rushed home and began to brainstorm muffin recipes. Blueberries, like many fresh berries, can be tricky. The blueberries are so good a juicy, but this means that you need the right balance in the muffins so that they don't fall apart from all the moisture. After a few tries, I came up with this recipe, which seems to be a good balance. I hope you enjoy as much as I am!



Recipe:

1 C hazelnut flour
1/2 C almond flour
1/2 C coconut flour
1 tbsp cinnamon
1 tsp nutmeg
1 tsp baking soda
1/4 C maple syrup
3/4 C sparkling water
1 quart fresh blueberries
4 eggs
pinch of salt

 

Preheat the oven to 325 degrees. In a food processor, pulse the hazelnut flour, almond flour, coconut flour, cinnamon, nutmeg, salt and baking soda until all the ingredients are well combined. Then add in the eggs, maple syrup and sparkling water and pulse until the batter is smooth. Slowly fold in the blueberries into the batter and spoon the mixture into a well greased muffin tin. Bake at 325 degrees for 20-25 minutes, until a toothpick comes out clean. Cool and enjoy! (with these you really do want to give them at least a few minutes to cool because the blueberries get quite toasty in the oven)







Saturday Morning at Maialino

This Saturday we tried this amazing little brunch spot down in Gramercy Park. While not an area of town I frequent, I'm glad we decided to explore something new. Maialino had some really delectable food and a cozy, homey environment. Every detail of this place was thought through, down to the little container the bill comes in - which had the cutest little piggy. What an excellent way to end a great meal!

(We also indulged in some pretty spectacular pastries...but devoured them before I could photograph them)

Sadly, the past few days have been quite chilly and have forced me to dig out a few of my warmer fall sweaters. I love this one in particular because not only is it warm and cozy, but it adds a touch of flare with the elbow patches!

Anchors Away

Sometimes you don't need a lot of fuss to make a statement with your outfit. I bought this anchor belt a while ago (because I am absolutely obsessed with all things nautical) and I find that it spruces up even the simplest outfits - like this one.

Orange Cranberry Loaf

A tasty treat to help the week go by...

Recipe:

2 C almond meal
4 eggs
1/4 C coconut sugar
1 tsp baking soda
3/4 C maple syrup
juice and zest of 1 orange
1/2 C apple juice infused cranberries



Preheat the oven to 350 degrees. In a food processor, pulse the almond meal, coconut sugar and baking soda until smooth. Add in the eggs, maple syrup, orange zest and orange juice and pulse until the batter is well combined. Stir in the cranberries and pour the batter into a greased loaf pan. Bake at 350 for 40-45 minutes, or until a toothpick comes out clean. Enjoy :)

After a week of really poor weather, the sun is finally shining again. With all the rain and gloom, it was hard to put together Spring looks and photograph them. So, after a week held up in my apartment, I was excited to step out to the famers market in this look. The bright pants...the sun shining - hello Spring!
